In Louisiana, Tony Chachere’s Creole spice is a staple and you can find it in the cabinet of any true Louisianian. So we were delighted when hosting Anthony Lil Tony Chachere and his crew to spice it up at New Life Retreat. They treated the whole facility to a meal of fresh seafood—fried soft-shell crab, fried shrimp, crawfish étouffée and fried catfish.

Each dish was hand-seasoned with care by Tony and his crew. The kitchen was bustling as they prepared some of the best seafood ever, filling the air with the spicy and salty aroma of Creole seasoning.

When Tony announced the food was ready, faces lit up and people lined up almost out the door to be served by Tony himself. Each bite was light and flaky and served with a savory home made tartar sauce. Deep fried soft-shell crab, shrimp and catfish, along with potato salad and cole slaw, filled everyone’s plates.

Tony’s grandfather (also Tony Chachere) started cooking his Creole style of seafood almost 100 years ago and since then, the Tony Chachere brand has set the standard for Creole seasoning. The name was passed down to his father and then to him.
